Hanukkah

Hanukkah is almost over, but it doesn't mean you can't stuff yourself with latkes. My mom makes a great latke with lots of love and cursing. Since we won't be celebrating together until the holiday is actually over, I decided to make a simpler batch for friends here in Boston. I used the Jerusalem recipe, which is chock full of parsnips instead of onions. These are light and easy to make, and I love the sweetness of the parsnips and the garlic-y chive. Will definitely make these bad boys again. They freeze well too... Happy Hanukkah!
