Huevos Rancheros Gringo Style

While we were in Mexico we celebrated my father's birthday. To start the day off right, my brother and I made our gringo version of huevos rancheros. Here's what we did:

Huevos Rancheros Gringo Style
Serves four

8 eggs
2 tablespoon of olive oil
1 onion, thinly sliced
1 red pepper, thinly sliced
1 avocado, halved and sliced
4 ounces of Oaxaca cheese, sliced 
8 tortillas
hot sauce
salt
pepper

Preheat oven to 350 degrees.

Heat a sauté pan over medium heat. Add one tablespoon of olive oil. Once the oil is hot, add the onions and peppers, and sauté until browned, about 10 minutes. Sprinkle with salt and pepper.

While the onions and peppers are cooking, heat a skillet over medium heat. Add the remaining olive oil. Once the olive oil is hot, crack the eggs into the skillet and cook until sunny-side up or desired texture.

While your vegetables and eggs are cooking on the stove top, place the slices of cheese on the tortillas, and bake in oven for five minutes. 

Once the cheese has melted, place the cooked egg, vegetables, and slices of avocado on the cheesy tortilla.  Top with your favorite hot sauce and enjoy!
