Shrimp in Orange Sauce
This shrimp recipe is easy and delicious, and perfect for those mid-weeknight dinners.
Shrimp in Orange Sauce
Serves two
3/4 cup of freshly squeezed orange juice
1 1/2 tablespoons of light brown sugar
1 tablespoon of soy sauce
1 teaspoon of freshly grated ginger
1 tablespoon of orange zest
2 tablespoons of olive oil
2 pounds of shrimp
2 scallions, thinly sliced with white and green parts
Sesame seeds
Heat orange juice, brown sugar, soy sauce, ginger in a small pot and bring to a boil. Simmer for 10 minutes. Add orange zest and set aside.
Meanwhile, heat olive oil in a large skillet until the oil starts to simmer. Add shrimp and cook for two-to-three minutes per side. Once shrimp is cooked, add to the sauce, toss, and add scallions and sesame seeds.
Serve over rice.
I'd also recommend a green to go alongside this dish. I made roasted kale, which was roasted with a few glugs of olive oil, a dash of sesame oil, and Braggs Amino Acids.
