The Best Breakfast Sandwich

I think we may have cracked the best breakfast sandwich yet. It was a bit haphazard, but turns out our fridge had everything we needed to craft this masterpiece. We happened to have onion rolls that my husband insisted that he had to have, which is interesting to me since I think he's only made himself a sandwich maybe once in the past few years. But I digress; we had eggs, smoked mozzarella from an earlier asparagus and walnut pesto pizza recipe, mushrooms, and bacon (you can also use turkey bacon).

This is pretty simple and you can play around with what sort of cheese and bread you use, but I liked the sweetness of the toasted onion bread alongside the subtle smokiness of the cheese and salty bacon.

The Best Breakfast Sandwich
Serves one

1 bulkie onion roll
pat of butter or olive oil
1 egg
2 strips of bacon
handful of mushrooms
2 slices of smoked mozzarella cheese
salt
pepper
Any special condiment such as ketchup, spicy mayo, sriracha, etc.

Heat a skillet over medium high heat. Add the bacon and cook until crispy. Remove bacon and add the mushrooms, cooking them in the leftover bacon fat for about five minutes. 

While the mushrooms are cooking, heat another skillet over medium heat. Add butter or olive oil, and crack an egg into the skillet and cook to desired liking (I like my eggs over easy), and sprinkle with salt and pepper. 

Meanwhile, toast the onion roll and add the slices of cheese until it starts to melt. Assemble sandwich and top with your condiment of choice. Enjoy.
