Even though Labor Day has come and gone, the weather is still nice and there are some lovely, ripe tomatoes in arms reach. We made this salad inspired from a recipe gifted to us by a family friend from the Wall Street Journal. It's full of end-of-summer delight and freshness; the sweetness of the corn and peaches harmonizes nicely with the acidity of the tomatoes and saltiness of the feta. The basil rounds out the dish. I can't wait to make this again.
Hold Onto Summer Salad
Serves Two
1 large ripe tomato, cut into thick slices
2 peaches, sliced
1 ear of corn, shucked
1/4 cup thinly sliced red onion
1/4 cup of feta
2 tablespoons of olive oil
handful of spinach
handful of basil
salt
pepper
Add all of the fruit and cheese in a bowl, toss with the olive oil, and salt and pepper. Enjoy!
