Zucchini Sausage Supreme
Every year a few of my friends have a Secret Santa tradition. This past holiday, my friend Emily nailed it and got me a Spiralizer. This thing is awesome! I was hand-peeling zucchini all summer and it was the pits. Now I can make fancy vegetable noodles and curls in seconds, while reaping the benefits of health. The recipe below came together on the fly. With pesto and sausage in the fridge, zucchini and tomatoes seemed like the perfect addition. Top it with fresh mozzarella and it's a win. If you want a lighter rendition, skip the sausage. Otherwise, enjoy!
Zucchini Sausage Supreme
Serves two
1 tablespoon olive oil
2 turkey sausage links, casings removed
2 small zucchini, "spiralized"
1 handful cherry tomatoes
1/4 cup pesto
1/4 cup mozzarella, sliced
salt
pepper
In medium skillet over medium heat, add a tablespoon of olive oil. When oil is hot, add sausages and stir until they start to brown. Remove sausages and set aside on a paper towel-lined plate.
In the same skillet, add the tomatoes and sauté until they begin to blister, about five minutes. Add the zucchini and stir for another five minutes.
Add the sausage, and salt and pepper as desired (I skipped salting altogether). Remove the vegetables and place in a large bowl. Add the pesto and mozzarella, mix together, and enjoy!
