Antioxidant Salad
Feeling gluttonous post holiday season? This healthy and colorful salad packs a punch, and nearly everything can be purchased from Trader Joes. It's cruciferous, plentiful, and you feel better eating it. I love the crunch of the slaw, the richness of the avocado and pistachios, the burst of the tart pomegranates, and the sweetness of the currants, topped with the salty cheese. A win win.
Antioxidant Salad
Serves two
1 package of broccoli kale slaw from Trader Joes
1 avocado, diced
1/2 lemon, juiced
1 tablespoon red wine vinegar
1/4 cup olive oil
2 gloves garlic, minced
1/2 shallot, minced
1/4 cup pistachios, roughly chopped
1/4 cup currants (or raisins or craisins)
1/4 cup pomegranate seeds
parmesan
salt
pepper
Make the vinaigrette by placing garlic and shallots into a jar, add the red wine vinegar, lemon juice, and then slowly add the olive oil, whisking as you go.
Assemble salad. Place slaw in a large bowl, top with avocado, nuts, currants, pomegranates. Toss with vinaigrette, and add salt, pepper, and finish with shaved parmesan. And enjoy!
