Veggie Summer Rolls with Spicy Peanut Sauce
I love summer rolls for a variety of reasons: the crunch of the vegetables, the health factor, and most of all, the peanut sauce. Let’s be honest, aren’t condiments often times the best part of food?
Below is a quick and dirty recipe for making your own summer rolls. And don’t worry, I included a recipe for a delicious spicy peanut sauce. The rolls can be adapted based on what you have in your fridge. I only had vegetables and avocado, but I’m certain cooked shrimp, chicken, or tofu would make wonderful additions,.
A few tips on the rice paper. I am by no means a pro; my rolling needs to be perfected for sure. I followed the directions from the package; place in warm water for five seconds. Dip the paper gingerly as mine cracked easily. However, a few small cracks are fine, because the paper is sticky and usually ends up sealing itself by the time you finish rolling the veggie roll. Veggie Summer Rolls with Spicy Peanut Sauce
Makes four rolls
4 pieces of rice paper
1 avocado, thinly sliced
1/3 cup cucumber, thinly sliced
1/3 cup carrot, thinly sliced
1/3 cup red pepper, thinly sliced
1/3 cup purple cabbage, thinly sliced
1 small handful cilantro ( I used stems and all)
Spicy Peanut Sauce
Makes about 1/2 cup
2 tablespoons crunchy peanut butter
1 1/2 tablespoons hoisin sauce
2 1/2 teaspoons soy sauce or tamari
1 garlic clove, minced
1 squirt sriracha
2 tablespoons water
In a small bowl, mix peanut butter, hoisin sauce, soy sauce, garlic, sriracha, and water. Set aside.
Fill up a large bowl with warm water. Gently dip rice paper in bowl, according to package instructions. Place damp rice paper on a plate or cutting board, positioning the rice paper in a diamond shape. Add a small handful of each of the vegetables, avocado, and cilantro towards the bottom of the diamond shape. Start to roll from the bottom point, and then gently fold in the sides of the rice paper, continuing rolling all the way up. You may need to seal with a dab of water. Roll the other three rolls and enjoy with copious amounts of spicy peanut sauce!
